Produces distinct red pigments used in creating “red yeast rice.” Indoors, M. ruber might contaminate damp, carbohydrate-rich areas (e.g. soaked grains, wet flour, or fermentation setups). Though not commonly a major indoor pest, large colonies could pose a mild respiratory or allergic risk. Keeping stored grains and flours dry, as well as cleaning up spills quickly, helps prevent its propagation.
